Bali Fried Duck



If you
do not have time to Bali to taste the delicious fried duck typical of this island, just try to make yourself at home. Savory duck is tender, especially when eaten warm with sauce matah and ointment that are spicy and delicious vegetables!

Fried Duck Ingredients:

1 whole (900 g) duck, cut into 4 parts
4 tablespoons vegetable oil
2 bay leaves
Two lime leaves
1 stalk lemongrass, crushed

Seasoning, puree:

2 inches fresh ginger
2 cm kencur
2 cm galangal
8 cloves of garlic
1 teaspoon shrimp paste fried
1/2 tsp coriander
1 teaspoon pepper grains
1 tsp sugar
2 tsp salt

complement:

sambal matah
Long Beans ointment

How to make Fried Duck Bali:

Subtle spice duck with stir until blended.
Let stand for several hours.
Heat oil, put seasoned duck, bay leaves, lime leaves and lemongrass.
Stir until the duck stiff and discolored.
Pour the water, cook over low heat until the duck meat is tender.
Remove and let cool.
Heat oil over medium heat a lot.
Duck fried until dry. Remove and drain.
Serve with Peanut Sauce Urap matah and length.
